Makes enough for 10 guests

For the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Drink (yields 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

Making the Syrup: Combine all the ingredients inside a pan, heat until it reaches a simmer, stirring until the sugar dissolves. After that, remove from the stove allowing it to cool down completely. Transfer into a sealable bottle, cap it and refrigerate it in the refrigerator, where it will keep for around a month.

Preparing the Batch Mix: Pour all the liquids into one sizeable container, allow it to infuse for an hour, then pass it through preferably using muslin, to ensure it's perfectly clear.

To serve: Pour 85ml of your batch mix into a cocktail shaker filled with ice, and agitate lightly for a minute to cool it down. Strain to a frosted cocktail glass or equivalent, garnish with some cranberries and complete it by giving it a light spray with the mandarin essence over the top.
